Melt in your mouth Pineapple Tarts

I am never a fan of Pineapple Tarts, simply because the pineapple filling is either too sweet or sour.  This Chinese New Year I've decided to make my own using a simple and reliable online recipe.  I love cookies which are "melt in the mouth" and this pineapple tart recipe is one which met my criteria, so to speak hehe!  Having no intention to make my own pineapple filling, I went scouting around few shops selling Baking Ingredients.  Happily I bought a packet home from K.T Bakery Food Supply.  My first attempt was spot on as the tarts are really melt in the mouth and the filling has a good balance of sweet and sour taste, Perfect!  This cookies finished in no time and I bake another batch during CNY and another just yesterday ~ smile ~



Ingredients:
125g unsalted butter (softened)
150g plain flour (sifted)
25g milk powder
15g icing sugar
1 egg yolk
Pineapple filling (shape into small round balls)
1 egg yolk (lightly beaten) as egg wash

Methods:

  1. Using an electric mixer blend together butter, icing sugar, milk powder and flour until well mixed.
  2. Add in egg yolk and blend into a soft dough. (do not over work the dough)
  3. Pinch off some dough to wrap the pineapple filling and roll into round balls. I use the back of a small knife to make criss-cross patterns.
  4. Place on a line baking sheet and use a soft brush to spread the egg wash on the top of the cookies.
  5. Bake in a preheated oven of 180 degree Celsius for about 20 minutes.

For purpose of my friends who are interested to buy the pineapple filling from our local baking store, this is the one that I am using... Enjoy baking!!
