Cajun Chicken and Corn Pizza


I am using the same Pizza Dough recipe as my previous bake.  The recipe can be obtain here

(A)  Ingredients for Cajun Chicken Filling:

1 chicken breast (boneless and skinless)

1 tsp. paprika

1/2 tsp. oregano

1/2 tsp. salt

1/2 tsp. onion powder

1/2 tsp. garlic powder

1/4 tsp. cayenne powder (add more if you prefer more spicy)

1 tsp. brown sugar

2-3 tbsp. cooking oil

1 cup shredded mozzarella cheese

1/2 cup canned corn kernels (drained well)


Methods:

  1. Slice the chicken breast in half along the center to make 2 thinner fillets.  
  2. In a bowl, combine paprika, onion powder, garlic powder, salt, oregano, brown sugar and cayenne.  Whisk well.
  3. Toss the chicken into the mixture, coating well.
  4. In a medium skillet, heat cooking oil over medium heat.  Cook the chicken for about 3-5 minutes on each side, or until golden and cooked through.  Transfer the cajun chicken to a plate.  Let cool then cut into small cubes and set aside.

(B)  Ingredients for White Pizza Sauce: 

3 tbsp. (43 grams) unsalted butter

3 tbsp.  plain flour

1 cup milk

1/3 cup shredded parmesan cheese


Methods:
  1. In a saucepan over medium-low heat, melt butter.  Add the flour and using a whisk, stir in the flour and cook until the paste-like mixture is lightly browned.
  2. Pour in the milk, and whisk continuously until the mixture thickens.  Turn off the heat and stir in the parmesan cheese.
  3. Transfer into two bowls and set aside.  


(C)  Assemble the pizza:
  1. Preheat the oven to 220 degree Celsius.  Lightly grease a 12-inch pizza pan with cooking oil.
  2. Take one portion of the risen dough, toss and shape the dough until it widens into a rough circle.  Place it into the pizza pan, stretching and patting until it takes the shape of the pan. 
  3. Spread half of the pizza sauce all over the dough.  Sprinkle half the cubed chicken on top, followed by half of the corn.  Sprinkle half of the mozzarella.  Spoon the remaining pizza sauce in dollops all over the pizza once again.  Top with remaining chicken, corn and mozzarella.
  4. Bake the pizza in a preheated oven for 18 minutes, or until the edges of the dough is lightly golden.  Allow the cooked pizza to rest for a few minutes.
  5. Slice and enjoy!
Time for baking!


Notes:-
  • To freeze the other half of the pizza dough, wrap it in plastic film, then in foil.  Freeze for up to a month.  To use, thaw at room temperature until soft.
  • The ingredients for the pizza filling and the white sauce above are also for two pizzas.  Keep the other half portion in containers in the fridge, if you are not making the second pizza right away.

Homemade Pizza with White Sauce

It's Sunday, a day which, once a while, I will make a batch of Pizza Dough; immediately bake one pizza for the day's lunch, and keep another portion of the dough in the freezer, and bake it for breakfast on a weekday.

So happen that my pizza baking day coincide with my hubby's birthday!  I decided to put a 'Happy Birthday Cake Topper' on the baked Pizza.  What a fun thing to do ~ smile ~

This is where he gets to have his first piece of Pizza, generously slathered with a special white sauce made from butter, milk, Parmesan cheese, bit of flour and chopped garlic; topped with ham, button mushroom, shredded mozzarella cheese and dried oregano.

I adapted this Pizza recipe from here.  Click on the link to get the full detailed recipe, if you are interested to bake your own pizza.  However, I adapted the recipe with some changes to suit my baking preference.

Chicken BBQ Pizza

 


Ingredients: 

(A)  For the Pizza Dough, click here for the recipe.

(B)  For the Chicken BBQ

  • 1 piece chicken breast (boneless and skinless)
  • 1/2 cup BBQ sauce, click here for my homemade BBQ sauce
  • salt and pepper
(C)  Extra toppings
  • 1/2 medium onion (peeled and sliced thinly)
  • 1 cup shredded mozzarella cheese
  • 1 1/4 tbsp. BBQ sauce
  • 1/2 tbsp. corn oil
  • Coriander leaves (for garnish)

Methods:
  1. To cook the chicken, preheat oven to 180 degree Celsius.  Season the chicken breast with salt and pepper.  Combine the chicken and the BBQ sauce in a shallow baking dish.  Bake for 22-28 minutes, or until chicken is fully cooked.  I use a knife to poke into the thickest part of the meat to confirm doneness.  Allow the chicken to cool slightly, then shred with two forks.  Stir the chicken back into the BBQ sauce in the dish.  Set aside.
  2. Grease a 9-inch Pizza Pan with corn oil.  Preheat oven to 230 degree Celsius.
  3. Take a portion of the dough, toss and shape until it widens into a rough circle.  Place the dough into the pan, stretching and patting until it takes the shape of the pan.  Brush the dough lightly with corn oil.  Spread 1 1/4 tablespoons of the BBQ sauce using the back of the spoon to even it out.  Spread the chicken over the pizza dough. Arrange the sliced onions over the chicken.  Sprinkle the mozzarella cheese over the top.
  4. Reduce temperature to 200 degree Celsius.  Bake the pizza for 8-10 minutes, or until the edges of the dough is slightly golden.
  5. Remove pizza from the pan when it is done and garnish with coriander leaves.
  6. Allow the pizza to rest for a few minutes.  Slice and enjoy!

Chicken Tikka Masala Pizza

I make another batch of the pizza dough with the recipe from my previous blog post, and with a 9-inch Pizza Pan, I bake this Chicken Tikka Masala Pizza for breakfast.  Another portion of the dough I place it in the freezer.


Ingredients:

Chicken Tikka Masala Topping

200 g. chicken breast (skinless and boneless) - cut into 1/2" cubes

3/4 tbsp. unsalted butter

2 cloves garlic (peeled and finely chopped)

Salt to taste

Corn oil for brushing (pizza pan and dough)

1/2 small onion (peeled and thinly sliced)

1/2 cup mozzarella cheese

Coriander leaves - for garnish


Marinade:

1/4 tsp. ground cumin

1/4 tsp. ground cayenne pepper

1/4 tsp. ground garam masala

1/4 tsp. minced fresh ginger

Dash of chicken stock granules

Dash of ground black pepper

1 tbsp. plain yogurt

Small pinch of ground cinnamon


Tomato Sauce: (mix in a small bowl)

80 g. tomato sauce

1 tbsp. plain yogurt

2 tbsp. milk


Spice Mix: (mix in a small bowl)

1/4 tsp. ground cumin

1/4 tsp. ground paprika

1/4 tsp. garam masala


Methods:

  1. In a bowl, marinade the chicken with the marinade ingredients for at least 1 hour in the refrigerator.
  2. Stir fry the marinated chicken until it is cooked, remove into a bowl and discard the juice, if any.
  3. Heat a small saucepan and melt the butter.  Saute the garlic until aromatic.  Pour in the Spice Mix and saute until fragrant.  Add in the tomato sauce mixture and stir well to mix.  Add salt to taste and continue to simmer until the sauce slightly thickens.  Turn off the heat and add the chicken meat into the sauce and mix well.  Dish into a bowl and set aside.
  4. Preheat oven to 230 degree Celsius.  
  5. Brush the pizza pan lightly with corn oil.
  6. Place the pizza dough onto the pan, press to stretch it to cover the whole pan.  Brush lightly with corn oil.  Spread the sauce/gravy on the pizza crust.  Sprinkle half of the cheese over the crust.  Arrange the chicken on top.  Top with sliced onions and remaining cheese.
  7. Reduce temperature to 200 degree Celsius.  Bake the pizza for 8-10 minutes.  
  8. Remove the pizza from the pan when it is done, and garnish with chopped coriander leaves.
  9. Breakfast is serve...

Homemade Pizza Dough

I never could imagine that making Pizza Dough is not as difficult as it seems.  Recently, I do lots of research online, viewing videos and read through many recipes and tips of making homemade pizza dough.  With my son, Aaron coming back for holiday, it is this right timing that I get to try out my first homemade pizza dough.  With his love for pizza and much knowledge which he acquired online, our first Pizza came out of the oven beautifully....

For infor, sorry for saying that, I am not able to share the recipe for the pizza sauce as we make use of the leftover pasta sauce, which Aaron cooked for us a few days ago.  For the fillings, we use ham and onion.

Notes/Tips:

  1. This pizza recipe makes two 9-inch pizza.
  2. You can use the remaining half of the ingredients to make another pizza right away or store the sauce and toppings in the fridge for up to two days.  
  3. For the balance half of the dough, if you are not making it right away, should be frozen until you are going to use it.  
  4. Place the dough into a Ziploc bag, squeeze out air, seal tight and place in the freezer.
  5. To use the dough, bring it out to room temperature and once it has soften, it is ready to use.  Base on my personal experience, it doesn't take long for it to soften.
  6. Another useful tip I get from this recipe is:  to make ahead, you can also assemble the pizza, then wrap the pan with aluminium foil (shining side out), and refrigerate it overnight.  To bake, remove the foil, and place it in a preheated oven... tada... Pizza is ready for breakfast!
  7. This Pizza Dough recipe is the recipe to use, whenever I want to make Pizza in the comfort of my home.
