Ingredients:
1/2 cup whole wheat flour
1/2 cup quick oats
1/2 cup icing sugar
57 g. unsalted butter (softened)
3 tbsp. almond nibs or sliced almonds
1 tbsp. milk
1 1/2 tsp. baking powder (sifted)
1/2 pinch of salt
Methods:
- In a bowl, combine flour, oats, almonds, baking powder and salt.
- In a mixer bowl, beat butter and icing sugar until light and creamy.
- Add in flour mixture and milk to the butter mixture and mix until incorporated.
- Divide dough into round balls.
- Place on a lined baking tray 1 1/2" apart.
- Bake in a preheated oven of 180 degree Celsius for 18 minutes.
- Remove from oven and let cool for 2-3 minutes.
- Remove onto wire rack and to let it cool completely.
- The cookies will be soft when taken out of the oven but will firm up once it cools down.
- Store in airtight container.
