Ham Avocado Salad

Ingredients:
2 pieces ham
I avocado
1 piece each of purple and white cabbage 
1 stick celery
1 tbsp of sunflower seeds

Dressing:
3 tbsp olive oil
3 tbsp apple cider vinegar
1/2 tsp ground mustard

Methods:

  1. Pan fry ham with a little oil, drain, and cut into preferred slices.
  2. Cut the avocado, remove the seed and slice.
  3. Wash and slice the purple and white cabbage.
  4. Wash and cut the celery stem into desired pieces and leave the leaves whole.
  5. Put all ingredients into a big bowl.
  6. Mix the dressing and pour over the ingredients, mix well.
  7. Chill in the fridge.
  8. Just before serving, sprinkle the sunflower seeds over the salad.
Note:  This simple salad which is healthy and high in fiber makes a full filling lunch for me.  You can use any types of vegetables to replace the ones that I am using, depending on individual liking.
