Ingredients:
3 cups plain flour (sifted)
2 tbsp. baking powder (sifted)
1 tbsp. sugar (optional), can add up to 3 tbsp.
1/2 tsp. salt
60gm. unsalted butter (cubed and keep it cold in the fridge)
1 cup milk, plus extra for brushing tops of scones
Methods:
- In a medium size bowl, combine flour, baking powder, sugar and salt together.
- Rub the butter into the flour until only pea sizes pieces. I use a pastry cutter, it's faster and easier.
- Add in the milk and mix the scone dough together with a wooden spoon.
- Roll scone dough out until it is about an inch thick.
- Use a cookie cutter to cut rounds out of the scone dough and place on a lined baking sheet. Gather together the remaining dough and cut out more scones, until all the dough is used up.
- Brush tops with milk. Bake in a preheated oven of 220 degree Celsius for 20-25 minutes until puffed up and golden brown on the top.
