Ingredients:
4 oz. butter
1/3 cup brown sugar
1 large egg
1 1/2 cup quick cooking oat
3/4 cup plain flour (sifted)
1 1/2 tsp. baking powder (sifted)
1/2 tsp. salt
Dash ground cinnamon
Methods:
- In a mixer bowl, cream butter and brown sugar until light and fluffy. Add egg and beat well after addition.
- In a bowl, combine oats, flour, baking powder, salt and cinnamon. Gradually add to the creamed mixture and mix to combine using a spatula.
- Scoop using an ice cream scoop of medium size, I use a butter knife to even the batter, then drop onto an ungreased baking sheet and flatten the top lightly with a fork.
- Bake in a preheated oven of 170 degree Celsius for 10-12 minutes or until lightly browned.
- Remove to wire rack to cool.
