Ingredients:
1 1/2 cups rolled oats
3/4 cup plain flour (sifted)
1 tsp. baking powder (sifted)
1/4 tsp. salt
2 tsp. Matcha green tea powder (sifted)
2 tbsp. corn oil
2 1/2 tbsp. honey (if you prefer sweeter add more)
1 egg
1/4 cup dark chocolate chips
Methods:
- In a bowl add flour, oats, baking powder, matcha and salt, and mix with a spoon until combined.
- In a separate bowl whisk together corn oil and honey until well combined. Then add egg and whisk until you get the smooth texture.
- Add the dry ingredients to the wet mixture and mix using a spatula. Finally, stir in dark chocolate chips. Mix gently with a spatula and let the mixture sit for a few minutes.
- With an ice-cream scoop or spoon, scoop the dough, and place it on a lined baking sheet. Arrange the cookies 1-inch apart. Slightly flatten the dough with the back of a spoon.
- Bake in a preheated oven of 180 degree Celsius for 12-15 minutes until the edges of the cookies begin to brown. Don't over bake them.
- Remove cookies from the oven, and let them cool for few minutes on the baking sheet. Then transfer cookies to a wire rack to let it cool completely.
