2 portions cooked rice (I use basmati rice)
1 bowl broccoli (cut into small florets)
1/2 cup minced chicken breast
3 eggs (beaten)
2 tablespoons light soy sauce
1/2 tablespoon sesame oil
1/2 tablespoon rice vinegar
1/2 teaspoon sugar
1/2 tablespoon fresh ginger (finely chopped)
3 cloves garlic (peeled and finely chopped)
2 tablespoons cooking oil
Methods:
- In a large wok over medium-high heat, add 1 tablespoon of cooking oil.
- Add the broccoli florets to the heated oil and cook, undisturbed, until they are nicely charred. Continue cooking, tossing often until they are crisp-tender. Transfer them to a bowl.
- In the same wok, reduce the heat to medium-low. Add the chicken breast and cook, while breaking it up with the spatula until cooked. Remove the cooked chicken to the bowl with the broccoli.
- In a small bowl, add the light soy sauce, sesame oil, rice vinegar, sugar, ginger and garlic and whisk to combine.
- In the same wok, add the remaining oil. Add the beaten eggs to the heated oil and cook until they are scrambled, about 30 seconds.
- Add the cooked rice and the sauce to the eggs and toss to combine. Press the rice mixture down in the wok, then toss again and press again with the spatula.
- Finally, add the cooked broccoli florets and chicken to the rice mixture, and toss to combine.
- Serve immediately!
