Kimchi lovers would love this simple and easy to whip-up cucumber dish which does not need salting, and no waiting. Just fresh, crunchy cucumbers coated in a bold and spicy Korean seasoning. It is so 'Simple Yet Yummylicious!'
Ingredients:
2 Japanese Cucumbers
1/2 onion
Seasoning:
1 tbsp. Korean red pepper flakes (gochugaru)
1 tbsp. gochujang
1 tbsp. sugar
1 tbsp. fish sauce
1 tbsp. vinegar
1 tbsp. sesame oil
1 tbsp. minced garlic
Sesame seeds (toasted)
Methods:
- Washed and sliced the cucumbers into bite-sized rounds.
- Thinly sliced the onions.
- In a large bowl, mix all the seasoning ingredients.
- Add the cucumbers and onion, then toss until evenly coated.
- Ready to serve.
