5 chicken wings
2 shallots (sliced)
2 cloves garlic (sliced)
1/2 onion (shredded)
1 tbsp of lemon juice
1/2 cup of water (add more when needed)
Seasonings:
1 tbsp dark soy sauce
1/2 tbsp of shao hsing wine
1/2 tbsp rock sugar (to taste)
Dash of grounded pepper
Methods:
- Rinse the chicken wings, cut and discard the tips, cut into two and drain.
- In a wok, heat 1 tbsp of oil and fry chicken wings till slightly brown.
- Add onion, shallots and garlic, fry till fragrant, then add in seasonings and lemon juice, stir till well combined.
- Add water, braise over low heat and stir often, taste for correct seasoning.
- When the gravy has reduced and the chicken is cooked, off the heat and serve.
