Plum sauce chicken with garlic flakes

Ingredients:
2 chicken thigh (cut into pieces)
8 pip garlic (peel and thinly slice)

Marinade:
1 tbsp light soy sauce
1 tbsp shao hsing wine

Sauce:
4 tbsp plum sauce
Drizzle of sesame oil
4 tbsp water
Salt (to taste)

Methods:

  1. Wash chicken pieces and marinate for 1 hour.
  2. Put enough oil in a wok to deep-fry garlic slices in medium heat till golden brown and crispy, drain and put aside for later use.
  3. In the same wok, put more oil if needed and deep-fry chicken pieces until cooked through, dish and drain.
  4. Mix together the sauce ingredients.
  5. In a clean wok, cook the sauce in a wok until thick, add in the fried chicken and mix well.
  6. Dish up into a serving plate, sprinkle the fried garlic flakes over the chicken and serve with freshly cooked white rice.
Note: During the process of frying the garlic slices, control the heat well so it will be crunchy and tasty and will not be bitter.
