Pork Chop in tomato sauce

Ingredients:
5 slices pork tenderloin
1/2 onion (shredded)
1/3 cup radish (shredded)
1/4 cup red carrot (shredded)
1/3 cup plain flour

Seasoning (A)
1/2 tsp salt
Dash of pepper
1/2 tbsp shao hsing wine
2 tbsp water

Seasoning (B)
3 tbsp tomato sauce
1/3 tsp salt (to taste)
1/2 tsp sugar (to taste)
1 cup water (to add more if needed)

Methods:

  1. Clean the pork, pound lightly and add in Seasoning A and marinate for 1 hour.
  2. Heat a wok with 3 tbsp cooking oil for frying the pork.
  3. Dredge pork with flour, knock off excess and fry in medium low heat till brown on both sides, drain.
  4. In a clean wok, heat 2 tbsp of oil and fry onion until fragrant.  Add in radish, red carrot and  stir well.
  5. Add Seasoning B and bring to a boil, taste for the correct seasoning and add more water if needed.
  6. Add pork and cook over low heat until cooked through.
  7. Once the sauce has thicken off the heat and arrange the meat and vegetables on a plate served with white rice.
Note:  During pan frying, the pork is not fully cooked, just sear on the surface until brown to seal in the meat juices, which is then cooked with the sauce in the final part of the cooking process.
