Crunchy Chicken Sandwich

Ingredients:
1 chicken breast
1/3 cup minced pork
1 piece dried mushroom (soaked and chopped)
Dash of chicken stock granules

Marinade:
1/4 tsp salt
dash of grounded pepper
1/2 tsp shao hsing wine
3 pip garlic (peeled and smashed)
3 slices ginger (smashed)

For coating: 
egg white (lightly beaten)
breadcrumbs

Methods:

  1. Slice chicken breast thinly, mix with marinade and leave for few hours.
  2. Combine the minced pork, chopped mushrooms and dash of chicken stock granules and mix well, set aside as filling for later use.
  3. To prepare the chicken sandwich, lay a piece of marinated chicken breast on a board, spread some filling of no.2 on the chicken, level it and lay another piece of chicken on top. Use a sharp knife, cut it into bite-size pieces.  Continue till all the chicken slices and filling are use up.
  4. Heat enough oil in a deep wok for deep-frying.  
  5. Dip the chicken sandwich into the lightly beaten egg white then dust with breadcrumbs and deep-fry in medium heated oil till golden.
  6. Remove from heat, drain on kitchen paper and serve.
Note:  Who could resist this crunchy chicken and meat dish?? Not for me, just can't have enough of it! ~ smile ~
