Cheesy baked vegetables with bacon

2 portion serving
Ingredients:
1/3 cup of pumpkin (sliced)
2 small potatoes (boiled and cubed)
1 tomato (wedged)
4 baby red carrot (boiled and halved)
1 stick celery (sliced)
2 cloves garlic (roughly chopped)
4 slices of bacon (halved)
1 tbsp melted butter
1 1/2 tbsp olive oil
1/2 cup grated cheddar cheese
Pepper and salt (to taste)

Methods:

  1. Mix all the vegetables and bacon in a large bowl, then spread on a baking dish oiled with cooking oil.
  2. Drizzle the melted butter, spread the grated cheese and olive oil over the vegetables, sprinkle with pepper and salt.
  3. Bake in oven of 200 degree Celsius until cheese has melted and vegetables are cooked through.
  4. Serve as salad or eaten as it is.
Note: Other vegetables such as capsicum, cauliflower and broccoli can be used according to own preference.
