1/3 cup of pumpkin (sliced)
2 small potatoes (boiled and cubed)
1 tomato (wedged)
4 baby red carrot (boiled and halved)
1 stick celery (sliced)
2 cloves garlic (roughly chopped)
4 slices of bacon (halved)
1 tbsp melted butter
1 1/2 tbsp olive oil
1/2 cup grated cheddar cheese
Pepper and salt (to taste)
Methods:
- Mix all the vegetables and bacon in a large bowl, then spread on a baking dish oiled with cooking oil.
- Drizzle the melted butter, spread the grated cheese and olive oil over the vegetables, sprinkle with pepper and salt.
- Bake in oven of 200 degree Celsius until cheese has melted and vegetables are cooked through.
- Serve as salad or eaten as it is.
Note: Other vegetables such as capsicum, cauliflower and broccoli can be used according to own preference.
