Ingredients:
1 cup purple and white cabbages (shredded)
1/4 cup carrot strips
1 sprigs parsley leaves
1 tbsp. roasted peanuts (roughly chopped)
Peanut Satay Dressing:
1 tbsp. peanut butter (smooth)
1 1/2 tbsp. coconut milk
1 tbsp. lime juice
1 tbsp. olive oil
1/2 tbsp. fish sauce
1/2 garlic cloves (roughly chopped)
1/2 tsp. brown sugar
Methods:
- Place all the peanut satay dressing ingredients into the blender bowl and blend until smooth. Remove into a small bowl and set aside.
- In a large bowl, add cabbages, carrots and parsley leaves. Add the dressing, gently toss until well combined. Top with roasted peanuts, and serve!
I adapted this recipe from 'Marion's Kitchen' with slight adjustment to suit my cooking preference.
