Oatmeal Cookies

I always loves to bake some cookies (less sweet, will always reduce the sugar content from original recipe) and place them in cookie jars to munch as and when the needs arises ☺☺ Just to be frank, I hardly buy ready made cookies and cakes as they are mostly too sweet for me.  Today, I am baking this Oatmeal Cookies, and they turn out so yummylicious.  Here is the recipe to share with all my friends and readers who loves cookies.


Ingredients: (makes 20)



4 oz. unsalted butter (softened)

1/3 cup dark brown sugar

1 large egg (room temperature)

2/3 cups plain flour (sifted)

1 1/2 tsp. baking powder (sifted)

1/4 tsp. salt

1/4 tsp. ground cinnamon

1 1/2 cups quick cooking oats

1/3 cup dark chocolate chips


Methods:

  1. Beat butter and sugar in a stand mixer until light and fluffy.  Beat in egg until well combined.
  2. In another bowl, whisk flour, baking powder, salt and cinnamon.  Gradually beat into butter mixture (1).  Stir in oats and dark chocolate chips.
  3. Shape dough into 20 balls (28.5g. each).  Place on lined baking sheet, 1" apart.  Flattened slightly with bottom of a glass dipped in caster sugar.
  4. Bake in a preheated oven of 170 degree Celsius for 10-13 minutes until golden brown.  Transfer cookies from pan to wire rack to cool completely.
  5. Store in airtight jars.
